Ingredients

  • 1 cup almond milk or dairy-free milk of choice
  • 2 tablespoons olive oil or melted coconut oil
  • 2 tablespoons maple syrup or sugar of choice
  • 1 teaspoon pure vanilla extract
  • More oil to grease your pan/skillet

Instructions

  1. 1. In a bowl, whisk together the flour, baking powder, and salt.
  2. 2. In another bowl, whisk together the milk, oil, maple syrup, and vanilla extract until blended.
  3. 3. Pour the liquid mixture into the dry ingredients and stir until just combined, leaving some lumps.
  4. 4. Let the batter rest for 5 minutes.
  5. 5. Heat a skillet over medium-low heat and lightly grease it if necessary.
  6. 6. Using a ¼-cup measure, pour the batter onto the skillet.
  7. 7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. 8. Repeat with the remaining batter and serve immediately.
