Dense Chocolate Loaf Cake

Ingredients

  • 1 cup soft unsalted butter
  • cups brown sugar
  • 1⅓ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 large eggs, beaten
  • 1 tablespoon vanilla extract
  • 4 ounces best bittersweet or semisweet chocolate, melted
  • 2 tablespoons Brandy or Bourbon or Grand Marnier
  • 1 cup brewed coffee

Instructions

  1. Preheat the oven to 375°F and line a loaf pan with parchment paper.
  2. Cream the butter and sugar together until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Add the eggs and vanilla to the butter-sugar mixture and mix well.
  5. Fold in the melted chocolate, then add the brandy and coffee, mixing to combine.
  6. Add the flour mixture and stir until just absorbed.
  7. Pour the batter into the prepared loaf pan, ensuring it does not overflow.
  8. Bake for 30 minutes, then reduce the temperature to 325°F and bake for an additional 15 to 20 minutes.
  9. Let the cake cool completely in the pan before removing.
