Ingredients

The batter

  • ¾ cup dark brown sugar
  • 1 cup dark unsweetened cocoa powder
  • cups all-purpose flour
  • ¾ cup granulated sugar
  • teaspoons baking soda
  • ¾ teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 large egg yolk
  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 8 ounces dark chocolate (60-72%), coarsely chopped

For serving

  • to taste whipped cream
  • to taste strawberries

Instructions

  1. Preheat the oven to 350°F and prepare a 9x5 inch loaf pan.
  2. Mix brown sugar, cocoa, flour, granulated sugar, baking soda, baking powder, and salt in a mixer.
  3. In a separate bowl, whisk eggs, egg yolk, buttermilk, oil, and vanilla, then combine with dry ingredients.
  4. Stir in chocolate chunks and pour the batter into the prepared pan.
  5. Bake for 1 to 1 hour and 10 minutes until a toothpick comes out clean, then cool for 15 minutes before transferring to a wire rack.
