Instructions
- 1. Boil water and cook spaghetti in salted water according to package directions, reserving at least 1 cup of the cooking water.
- 2. In a saucepan, heat milk, onion, peppercorns, and garlic over medium-high heat until steaming, then set aside.
- 3. Melt butter in a separate saucepan over medium-high heat, then add flour and whisk to form a paste.
- 4. Strain the milk mixture and add half to the roux, whisking until smooth, then add the remaining milk.
- 5. Stir in salt and dry mustard, and simmer for 2 minutes on low heat.
- 6. Add Gruyere, white cheddar, parmesan, and Worcestershire sauce, stirring until cheese melts.
- 7. Use reserved pasta water to adjust the sauce consistency, then mix in the cooked spaghetti.
- 8. Garnish with parsley, pepper, and additional cheese if desired.
