Ingredients

The pasta

  • 16 ounces spaghetti

The sauce

  • 2 cups milk
  • ½ onion quartered
  • 1 tablespoon black peppercorns
  • 1 clove garlic
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon sea salt
  • ¼ teaspoon dry mustard
  • 1 cup grated gruyere cheese
  • ½ cup grated white cheddar
  • ½ cup grated parmesan
  • ½ teaspoon Worcestershire sauce

Instructions

  1. 1. Boil water and cook spaghetti in salted water according to package directions, reserving at least 1 cup of the cooking water.
  2. 2. In a saucepan, heat milk, onion, peppercorns, and garlic over medium-high heat until steaming, then set aside.
  3. 3. Melt butter in a separate saucepan over medium-high heat, then add flour and whisk to form a paste.
  4. 4. Strain the milk mixture and add half to the roux, whisking until smooth, then add the remaining milk.
  5. 5. Stir in salt and dry mustard, and simmer for 2 minutes on low heat.
  6. 6. Add Gruyere, white cheddar, parmesan, and Worcestershire sauce, stirring until cheese melts.
  7. 7. Use reserved pasta water to adjust the sauce consistency, then mix in the cooked spaghetti.
  8. 8. Garnish with parsley, pepper, and additional cheese if desired.
