Gluten Free Sweet Cherry Crumble

The cherry filling

pure maple syrup

Instructions
- Preheat the oven to 350°F.
- In a food processor, combine the sliced almonds, rolled oats, almond flour, tapioca starch, coconut flour, cinnamon, baking soda, salt, and cream of tartar. Pulse until combined.
- Add the chilled coconut oil and pulse until the mixture is well combined but still crumbly. Set aside.
- In a separate bowl, mix the tapioca starch, ground cinnamon, and salt.
- Place the pitted cherries in a large bowl and sprinkle the tapioca mixture over them. Toss to coat the cherries.
- Transfer the cherries to a 9" square baking dish and pour the maple syrup and vanilla extract over them.
- Spread the crumble mixture evenly over the cherries.
- Bake for 50 to 55 minutes until the topping is golden brown and the filling is bubbling.
- Allow to cool for at least 1 hour before serving.
