Gluten Free Sweet Cherry Crumble

Ingredients

The crumble

  • 1 cup sliced raw almonds
  • 1 cup rolled oats
  • 1 cup almond flour
  • ½ cup tapioca starch
  • ¼ cup coconut flour
  • 1 tbsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp cream of tartar
  • ¾ cup coconut oil, chilled

The cherry filling

  • 6 cups pitted sweet cherries
  • ½ cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 3 tbsp tapioca starch
  • ½ tsp ground cinnamon
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, combine the sliced almonds, rolled oats, almond flour, tapioca starch, coconut flour, cinnamon, baking soda, salt, and cream of tartar. Pulse until combined.
  3. Add the chilled coconut oil and pulse until the mixture is well combined but still crumbly. Set aside.
  4. In a separate bowl, mix the tapioca starch, ground cinnamon, and salt.
  5. Place the pitted cherries in a large bowl and sprinkle the tapioca mixture over them. Toss to coat the cherries.
  6. Transfer the cherries to a 9" square baking dish and pour the maple syrup and vanilla extract over them.
  7. Spread the crumble mixture evenly over the cherries.
  8. Bake for 50 to 55 minutes until the topping is golden brown and the filling is bubbling.
  9. Allow to cool for at least 1 hour before serving.
