Ingredients

The cherry filling

  • 3 cups fresh sweet cherries, pitted and halved
  • 3 tablespoons Simple Truth Raw Honey
  • 1 tablespoon arrowroot
  • 1 tablespoon lemon juice
  • dash salt

The crisp topping

  • ¾ cup sliced almonds
  • ½ cup gluten free regular oatmeal
  • 2 tablespoons Simple Truth Raw Honey
  • ½ tablespoon coconut oil
  • ¾ teaspoon ground cinnamon
  • dash salt

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine the cherries, honey, arrowroot, lemon juice, and salt, then toss to coat and set aside.
  3. In a small bowl, mix the sliced almonds, oatmeal, honey, coconut oil, cinnamon, and salt until well combined.
  4. Spread the cherry mixture evenly in two 2.5-inch cast iron skillets or an 8x8 pan, then top with the crisp mixture.
  5. Place the skillets on a baking sheet and bake for 30 minutes until bubbly and slightly browned.
  6. Remove from the oven and serve, optionally with ice cream.
