Ingredients

The filling

  • 5 cups halved pitted cherries
  • ½ cup granulated sugar
  • 3 Tablespoons cornstarch
  • 2–3 Tablespoons bourbon
  • ½ teaspoon pure vanilla extract

The topping

  • ½ cup packed light or dark brown sugar
  • 6 Tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • 6 Tablespoons unsalted butter, very cold and cubed
  • cup old-fashioned whole rolled oats
  • handful slivered/chopped/sliced almonds (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9-inch round or square baking dish.
  2. Combine all filling ingredients in a large bowl and spread into the baking dish.
  3. For the topping, whisk together brown sugar, flour, and cinnamon in a medium bowl. Cut in the cold butter until crumbly, then fold in oats and almonds.
  4. Sprinkle the topping evenly over the filling.
  5. Bake for 40-45 minutes until the topping is golden brown and the fruit juices are bubbling.
  6. Let cool for a few minutes before serving warm, or serve at room temperature or cold.
