Instructions
- Pit the cherries and place them in a large bowl.
- Preheat the oven to 350°F.
- Add flour, monk fruit sweetener, vanilla extract, almond extract, and lemon juice to the cherries and stir to coat.
- Transfer the cherry mixture to an 8x8 baking dish.
- Prepare the crumble topping by mixing monk fruit sweetener, gluten-free flour, baking powder, cinnamon, vanilla extract, almond extract, kosher salt, and melted butter until it resembles cookie dough.
- Scoop the crumble topping over the cherries in the baking dish.
- Bake for 35 minutes until the cherries are bubbling and the topping is golden.
- Let cool for 10 minutes before serving, ideally with vanilla ice cream.
