Ingredients

The filling

  • 5 cups Fresh Cherries, pitted
  • 2 tablespoons Gluten-Free All-Purpose Flour
  • ¼ cup Granulated Monk Fruit Sweetener
  • 2 teaspoons Vanilla Extract
  • ½ teaspoon Almond Extract
  • ½ lemon juiced

The cobbler topping

  • cup Granulated Monk Fruit Sweetener
  • 1 cup Gluten-Free All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Almond Extract
  • ½ teaspoon Kosher Salt
  • 6 tablespoons Unsalted Butter, melted

Instructions

  1. Pit the cherries and place them in a large bowl.
  2. Preheat the oven to 350°F.
  3. Add flour, monk fruit sweetener, vanilla extract, almond extract, and lemon juice to the cherries and stir to coat.
  4. Transfer the cherry mixture to an 8x8 baking dish.
  5. Prepare the crumble topping by mixing monk fruit sweetener, gluten-free flour, baking powder, cinnamon, vanilla extract, almond extract, kosher salt, and melted butter until it resembles cookie dough.
  6. Scoop the crumble topping over the cherries in the baking dish.
  7. Bake for 35 minutes until the cherries are bubbling and the topping is golden.
  8. Let cool for 10 minutes before serving, ideally with vanilla ice cream.
