Ingredients

  • 2 ½ cups oat flour
  • 2 tablespoons coconut sugar or light brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon powdered ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon orange zest
  • ½ teaspoon salt
  • 1 ¼ cups orange juice
  • cup creamy almond butter
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with papers.
  2. In a large bowl, mix together the oat flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, orange zest, and salt.
  3. In another bowl, combine the orange juice, almond butter, maple syrup, coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just blended, then fold in the chocolate chips.
  5. Divide the batter among the muffin cups, filling them generously, and sprinkle with a pinch of sugar.
  6. Bake for 20 to 22 minutes, until the tops spring back when touched.
  7. Let cool completely on a rack before removing from the tins.
