Greek Slow Cooker Lemon Chicken and Potatoes

Ingredients

  • 2 lbs yellow potatoes, cut into large chunks
  • ½ medium yellow onion, cut into chunks
  • 5 cloves garlic, minced
  • tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried rosemary, crushed
  • to taste salt and freshly ground black pepper
  • 3 lbs bone-in, skin-on chicken thighs
  • Tbsp olive oil
  • ½ cup chicken broth
  • Tbsp fresh lemon juice
  • 2 tsp lemon zest, divided
  • 3 Tbsp fresh parsley

Instructions

  1. Layer potatoes and onions in the slow cooker.
  2. Pour chicken broth over the vegetables and season with half of the garlic, oregano, basil, rosemary, salt, and pepper.
  3. Sear the chicken thighs in batches until golden brown, then transfer to the slow cooker.
  4. Pour lemon juice over the chicken and sprinkle with the remaining garlic, oregano, rosemary, and basil.
  5. Add 1 tsp of lemon zest to the chicken.
  6. Cover and cook on low for 5½ to 7 hours.
  7. Serve warm, garnished with fresh parsley and remaining lemon zest.
