Greek Slow Cooker Lemon Chicken and Potatoes

Instructions
- Layer potatoes and onions in the slow cooker.
- Pour chicken broth over the vegetables and season with half of the garlic, oregano, basil, rosemary, salt, and pepper.
- Sear the chicken thighs in batches until golden brown, then transfer to the slow cooker.
- Pour lemon juice over the chicken and sprinkle with the remaining garlic, oregano, rosemary, and basil.
- Add 1 tsp of lemon zest to the chicken.
- Cover and cook on low for 5½ to 7 hours.
- Serve warm, garnished with fresh parsley and remaining lemon zest.
