Slow Cooker Lemon Thyme Chicken

Stuffing the chicken

(use the one you zested)

Instructions
- Make the rub by mixing the ghee, salt, pepper, thyme, lemon zest, and minced garlic in a small bowl.
- Detach the skin from the chicken by gently running your fingers under it, starting from the butt end and moving towards the front and legs.
- Rub about ¾ of the ghee mixture directly on the meat under the loosened skin and the remaining on the outside of the skin.
- Stuff the chicken with lemon wedges, smashed garlic, and fresh thyme, then tie the legs with butcher's twine.
- Prepare the slow cooker by adding chopped leek, garlic, fresh thyme, and lemon halves at the bottom.
- Sprinkle the mixture with salt and pepper, and refrigerate overnight if possible.
- Cook the chicken on low for 8 hours or high for 5 hours.
