Ingredients

The chicken and rub

  • 1 large whole chicken
  • 2-3 tbsp ghee
  • 1 tsp Himalayan salt
  • 1 tsp freshly ground black pepper
  • 1 tbsp fresh thyme, finely chopped
  • the zest of 1 lemon
  • 1 clove garlic, minced

Stuffing the chicken

  • 1 whole lemon, washed and cut into quarters
  • 3-4 cloves garlic, peeled and smashed
  • 3-4 sprigs fresh thyme

The bed for the chicken

  • 1 leek, washed and chopped
  • 1 lemon, washed and cut in half (use the one you zested)
  • 6 cloves garlic, peeled and smashed
  • 7-8 sprigs fresh thyme
  • generous sprinkle of salt and pepper

Instructions

  1. Make the rub by mixing the ghee, salt, pepper, thyme, lemon zest, and minced garlic in a small bowl.
  2. Detach the skin from the chicken by gently running your fingers under it, starting from the butt end and moving towards the front and legs.
  3. Rub about ¾ of the ghee mixture directly on the meat under the loosened skin and the remaining on the outside of the skin.
  4. Stuff the chicken with lemon wedges, smashed garlic, and fresh thyme, then tie the legs with butcher's twine.
  5. Prepare the slow cooker by adding chopped leek, garlic, fresh thyme, and lemon halves at the bottom.
  6. Sprinkle the mixture with salt and pepper, and refrigerate overnight if possible.
  7. Cook the chicken on low for 8 hours or high for 5 hours.
