Ingredients

Dry Ingredients

  • 2 cups Wholesome Yum Blanched Almond Flour
  • 1 cup Besti Monk Fruit Allulose Blend
  • ½ cup Dutch processed cocoa powder
  • ¼ cup Collagen protein powder
  • tsp Baking powder
  • ¼ tsp Sea salt

Wet Ingredients

  • cup Coconut oil (melted)
  • ½ cup Unsweetened almond milk (at room temperature)
  • 3 large Eggs (at room temperature)
  • ½ tsp Vanilla extract

Add-ins

  • ¾ cup Sugar-free dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and line a muffin pan with parchment or silicone liners.
  2. In a large bowl, combine the almond flour, sweetener, cocoa powder, collagen, baking powder, and sea salt.
  3. Stir in the melted coconut oil and almond milk, then whisk in the eggs and vanilla. Fold in the chocolate chips.
  4. Scoop the batter evenly into the muffin cups, filling them almost full. Optionally, sprinkle additional chocolate chips on top.
  5. Bake for about 25 minutes until the tops are slightly darker and a toothpick inserted comes out clean.
