Instructions
- 1. Preheat the oven to 375°F and grease a cookie sheet.
- 2. Whisk together the flour, oats, baking soda, and salt in a bowl.
- 3. In a separate bowl, beat the applesauce, maple syrup, butter, egg, and vanilla using an electric mixer.
- 4. Gradually add the dry ingredients to the wet mixture until well blended.
- 5. Fold in the chopped pecans with a spatula.
- 6. Drop spoonfuls of the mixture onto the prepared cookie sheet.
- 7. Bake for 8 to 9 minutes or until the cookies start to brown.
