Maple Pecan Oatmeal Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a small bowl, mix together the flour, oats, baking soda, salt, and cinnamon.
- In a large bowl, whisk together the butter, coconut sugar, and maple syrup. Add the egg and vanilla, and mix well.
- Gradually add the dry ingredients to the wet ingredients in two batches, mixing until combined. Then add the chopped pecans.
- Refrigerate the dough for 30 minutes.
- Using a cookie scoop, portion out the dough into 15 cookies and place them on the baking sheet, pressing them down slightly.
- Bake for 14-16 minutes or until golden brown.
- While the cookies are baking, prepare the icing by whisking together all icing ingredients.
- Once the cookies have cooled, drizzle or dip them in the icing.
