Ingredients

The cookie mixture

  • cup natural peanut butter
  • cup real maple syrup, preferably grade B
  • 4 tablespoons unsalted butter or coconut oil, melted

  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine-grain sea salt

The oats and chocolate chips

  • 1 ¼ cups old-fashioned rolled oats, ground
  • 1 ½ cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare two baking sheets with parchment paper.
  2. In a measuring cup, combine peanut butter and maple syrup, then pour into a mixing bowl.
  3. Add melted butter and whisk until blended, then mix in the egg, vanilla, baking soda, baking powder, and salt.
  4. Stir in the ground oats, rolled oats, and chocolate chips until combined.
  5. Drop tablespoon-sized portions of dough onto prepared baking sheets.
  6. Bake for about 12 minutes, swapping the pans halfway through, until cookies are set and golden around the edges.
  7. Allow cookies to cool completely on the baking sheets.
