Chewy Peanut Butter Oatmeal Cookies

Ingredients

  • ¼ cup melted unsalted butter
  • ½ cup light brown sugar, packed
  • 2 tablespoons maple syrup
  • 1 large egg
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • pinch salt
  • 2.5 cups quick-cooking oats
  • 1 teaspoon baking soda
  • ¾ cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 350ºF and spray baking sheets with nonstick cooking spray.
  2. Combine melted butter and brown sugar until smooth, then add maple syrup, egg, peanut butter, and vanilla, mixing well.
  3. Add salt, quick-cooking oats, and baking soda, and mix until combined. If using, add chocolate chips and mix again.
  4. Refrigerate the dough for 20 minutes.
  5. Scoop 2 tablespoons of dough, roll into a ball, and slightly press down to form a cookie shape. Place on the baking sheet, spacing them out.
  6. Bake for 11-14 minutes until golden brown.
  7. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
