Chewy Peanut Butter Oatmeal Cookies

Instructions
- Preheat the oven to 350ºF and spray baking sheets with nonstick cooking spray.
- Combine melted butter and brown sugar until smooth, then add maple syrup, egg, peanut butter, and vanilla, mixing well.
- Add salt, quick-cooking oats, and baking soda, and mix until combined. If using, add chocolate chips and mix again.
- Refrigerate the dough for 20 minutes.
- Scoop 2 tablespoons of dough, roll into a ball, and slightly press down to form a cookie shape. Place on the baking sheet, spacing them out.
- Bake for 11-14 minutes until golden brown.
- Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
