Instructions
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, beat the butter until smooth, then add the granulated sugar and brown sugar, beating until creamed.
- Add the eggs, peanut butter, and vanilla, and mix until combined.
- Combine the dry ingredients with the wet ingredients, then mix in the oats and chocolate chips until the dough is thick and sticky.
- Chill the dough in the refrigerator for at least 20 minutes.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop 2 tablespoons of dough for each cookie and place them on the baking sheets, spacing them 3 inches apart.
- Bake for 12-14 minutes until lightly browned on the edges, allowing the centers to remain soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
