Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 2 large eggs
  • 1 cup creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 cups old-fashioned whole rolled oats
  • cups semi-sweet chocolate chips

Instructions

  1. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  2. In a large bowl, beat the butter until smooth, then add the granulated sugar and brown sugar, beating until creamed.
  3. Add the eggs, peanut butter, and vanilla, and mix until combined.
  4. Combine the dry ingredients with the wet ingredients, then mix in the oats and chocolate chips until the dough is thick and sticky.
  5. Chill the dough in the refrigerator for at least 20 minutes.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Scoop 2 tablespoons of dough for each cookie and place them on the baking sheets, spacing them 3 inches apart.
  8. Bake for 12-14 minutes until lightly browned on the edges, allowing the centers to remain soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
