Ingredients

  • 3 cups old fashioned oats
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp freshly ground nutmeg
  • ¼ tsp salt
  • 8 oz unsalted butter, at room temperature
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 9 oz bittersweet chocolate, chopped into chunks

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment or silicone mats.
  2. In a bowl, whisk together the oats, flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a stand mixer or large bowl, beat the butter, peanut butter, sugar, and brown sugar until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
  5. Reduce the mixer speed and gradually add the dry ingredients, mixing until just blended.
  6. Stir in the chocolate chunks.
  7. If possible, chill the dough for about 2 hours or up to one day.
  8. Drop rounded tablespoonfuls of dough onto the baking sheets, spacing them 2 inches apart.
  9. Press the dough balls gently to flatten them to about ½ inch thick.
  10. Bake for 13 to 15 minutes, rotating the sheets halfway through, until golden and firm around the edges.
  11. Transfer the cookies to a cooling rack to firm up as they cool.
