Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment or silicone mats.
- In a bowl, whisk together the oats, flour, baking soda, cinnamon, nutmeg, and salt.
- In a stand mixer or large bowl, beat the butter, peanut butter, sugar, and brown sugar until smooth and creamy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
- Reduce the mixer speed and gradually add the dry ingredients, mixing until just blended.
- Stir in the chocolate chunks.
- If possible, chill the dough for about 2 hours or up to one day.
- Drop rounded tablespoonfuls of dough onto the baking sheets, spacing them 2 inches apart.
- Press the dough balls gently to flatten them to about ½ inch thick.
- Bake for 13 to 15 minutes, rotating the sheets halfway through, until golden and firm around the edges.
- Transfer the cookies to a cooling rack to firm up as they cool.
