Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flours, baking soda, baking powder, salt, and cinnamon.
- In a large bowl or stand mixer, beat the butter until light and fluffy, then add the sugar and mix well.
- Add the eggs one at a time, mixing well after each addition.
- Whisk in the vanilla extract and maple syrup.
- Gradually add the dry ingredients in three increments, stirring between each addition until a uniform dough forms.
- Stir in the chocolate chips and oats by hand until evenly distributed.
- Drop about two tablespoons of dough per cookie onto the baking sheet, leaving space between each.
- Bake for about 10 minutes, until the tops are just golden.
- Allow the cookies to set on the baking sheet for a minute before transferring them to a cooling rack. Sprinkle with Maldon salt if desired.
