Instructions
- Preheat the oven to 350°F (180°C) and line two baking sheets with parchment paper.
- In a medium bowl, combine the oats, flour, wheat bran, baking soda, baking powder, and salt.
- Cream the butter until light and fluffy, then beat in the sugars for about 3 minutes.
- Incorporate the eggs one at a time, followed by the vanilla, scraping the sides of the bowl as needed.
- Add the dry mixture to the wet ingredients and stir until just combined, then fold in the chocolate.
- Use a scoop or measuring cup to form uniform dough balls and place them on the baking sheets, spaced apart.
- Bake until the cookies are deeply golden on the bottom, about 15 minutes, rotating the pans halfway through.
- Cool the cookies on a rack before serving.
