Instructions
- Preheat the oven to 350°F.
- Cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs and vanilla, mixing until combined.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, cornstarch, and salt.
- Gradually add the flour mixture to the butter mixture, mixing until combined.
- Stir in the oats until just combined.
- If using, fold in any optional add-ins.
- Shape the dough into balls and place on a parchment-covered baking sheet.
- Chill the dough in the refrigerator for at least 10-20 minutes.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
