Ingredients

The pork

  • 2 lbs. pork shoulder (or pork top loin for lean cut)

The seasoning

  • 1 tbsp. light brown sugar
  • 1 tsp. salt
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. mustard powder
  • ¼ tsp. smoked paprika
  • ¼ tsp. black pepper
  • 5 sprigs fresh thyme
  • 2 leaves bay leaves

The liquids

  • cups beer
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. Worcestershire sauce
  • ½ tbsp. soy sauce
  • 1 cup beef broth
  • ½ cup water

The assembly

  • 4 slices provolone cheese
  • 4 pieces bakery buns (egg buns, hoagies, or your preference)

Instructions

  1. Set the slow cooker on 'low'.
  2. Whisk together the seasonings in a small bowl.
  3. Rinse and dry the pork, then rub the seasonings all over it.
  4. Place the pork in the slow cooker and add the liquids and herbs.
  5. Cover and cook for 7 hours.
  6. Shred the pork and let it absorb liquids for 30 minutes.
  7. Divide the pork into portions and shape it on a baking sheet.
  8. Top with provolone cheese and broil until bubbly.
  9. Mix beef broth and water into the slow cooker for au jus.
  10. Serve the pork on buns with au jus on the side.
