Chocolate Chip Almond Meal Cookies

Ingredients

  • 1 1/4 cups almond meal
  • 1/4 cup vegan dark chocolate
  • 1/2 cup finely shredded unsweetened coconut
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/3 cup organic brown sugar
  • 1/4 cup aquafaba
  • 3 Tbsp coconut oil
  • 1/2 tsp vanilla extract

Instructions

  1. Mix almond meal, dark chocolate, coconut, baking powder, salt, and sugar in a large bowl.
  2. In another bowl, whip aquafaba until light and fluffy, then mix in melted coconut oil and vanilla.
  3. Combine the aquafaba mixture with the dry ingredients until just mixed to form a semi-tacky dough.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Scoop 1 1/2-Tbsp amounts of dough and form into discs, placing them on a baking sheet with space between each cookie.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. Let cool for 5-10 minutes before transferring to a cooling rack.
