Chocolate Chip Almond Meal Cookies

Instructions
- Mix almond meal, dark chocolate, coconut, baking powder, salt, and sugar in a large bowl.
- In another bowl, whip aquafaba until light and fluffy, then mix in melted coconut oil and vanilla.
- Combine the aquafaba mixture with the dry ingredients until just mixed to form a semi-tacky dough.
- Chill the dough in the refrigerator for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Scoop 1 1/2-Tbsp amounts of dough and form into discs, placing them on a baking sheet with space between each cookie.
- Bake for 12-15 minutes until edges are golden brown.
- Let cool for 5-10 minutes before transferring to a cooling rack.
