Coconut Chocolate Chip Almond Meal Cookies

Instructions
- 1. Combine almond meal, dark chocolate, coconut, baking powder, salt, and sugar in a mixing bowl.
- 2. In another bowl, beat the egg until foamy, then whisk in coconut oil and vanilla.
- 3. Mix the wet ingredients into the dry ingredients until just combined.
- 4. Chill the dough in the fridge for 15-30 minutes.
- 5. Preheat the oven to 375°F (190°C) and prepare a baking sheet.
- 6. Shape the dough into 1-inch discs and place them on the baking sheet, pressing down slightly.
- 7. Bake for 8-12 minutes until the edges begin to brown.
- 8. Allow the cookies to cool completely before serving.
