Ingredients

  • 1 ¼ cups almond meal or almond flour
  • ¼ cup chopped dairy-free dark chocolate
  • ½ cup shredded unsweetened coconut
  • ½ tsp baking powder
  • ¼ tsp salt
  • cup brown sugar
  • 1 large egg
  • 3 Tbsp coconut oil (melted)
  • ½ tsp vanilla extract

Instructions

  1. 1. Combine almond meal, dark chocolate, coconut, baking powder, salt, and sugar in a mixing bowl.
  2. 2. In another bowl, beat the egg until foamy, then whisk in coconut oil and vanilla.
  3. 3. Mix the wet ingredients into the dry ingredients until just combined.
  4. 4. Chill the dough in the fridge for 15-30 minutes.
  5. 5. Preheat the oven to 375°F (190°C) and prepare a baking sheet.
  6. 6. Shape the dough into 1-inch discs and place them on the baking sheet, pressing down slightly.
  7. 7. Bake for 8-12 minutes until the edges begin to brown.
  8. 8. Allow the cookies to cool completely before serving.
