Ingredients

  • ¼ cup coconut oil
  • cup coconut or organic cane sugar
  • 2 Tbsp almond butter
  • 3 Tbsp aquafaba
  • ½ tsp sea salt
  • 1 tsp baking powder
  • 1 ⅓ cup almond flour
  • ½ cup desiccated coconut
  • ¾ cup vegan dark chocolate chips

Instructions

  1. 1. Combine coconut oil, sugar, almond butter, aquafaba, sea salt, and baking powder in a mixing bowl and mix well.
  2. 2. Add almond flour and desiccated coconut, mixing until the dough is formed.
  3. 3. Stir in the chocolate chips, cover the dough, and refrigerate for at least 30 minutes.
  4. 4. Preheat the oven to 350°F (176°C).
  5. 5. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  6. 6. Slightly flatten each cookie before baking.
  7. 7. Bake for 12-16 minutes until edges are golden and tops appear dry.
  8. 8. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack.
