Instructions
- 1. Combine coconut oil, sugar, almond butter, aquafaba, sea salt, and baking powder in a mixing bowl and mix well.
- 2. Add almond flour and desiccated coconut, mixing until the dough is formed.
- 3. Stir in the chocolate chips, cover the dough, and refrigerate for at least 30 minutes.
- 4. Preheat the oven to 350°F (176°C).
- 5. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- 6. Slightly flatten each cookie before baking.
- 7. Bake for 12-16 minutes until edges are golden and tops appear dry.
- 8. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack.
