Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • teaspoon salt
  • 1 cup mixed berries, fresh or frozen

Wet Ingredients

  • ½ cup unsweetened applesauce
  • 2 large eggs
  • ½ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup plain, unsweetened almond milk
  • cup maple syrup or honey

Toppings

  • to taste maple syrup or honey
  • to taste nut butter

Instructions

  1. Preheat the oven to 350°F and spray an 8×8-inch baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together all dry ingredients except for the berries.
  3. Add the wet ingredients to the dry ingredients and mix with a wooden spoon until combined.
  4. Gently fold in the berries.
  5. Transfer the batter to the baking dish and sprinkle additional berries and oats on top if desired.
  6. Bake for about 40 minutes or until the center is fully cooked.
  7. Allow the bread to cool for at least 15 minutes before slicing and serving.
