One Pan Mediterranean Chicken Skillet

spaghetti squash (optional, omit for keto)
Instructions
- Preheat the oven to 400°F.
- Cut the spaghetti squash in half, scoop out the seeds, and place it face-down on a sheet pan.
- In a cast iron skillet, heat over medium heat and add onions, artichoke hearts, and garlic, cooking for 4-5 minutes until softened.
- Move the vegetables aside and season the chicken with salt and pepper, browning it in the skillet for about 5 minutes on each side.
- Add tomatoes, olives, and spinach to the skillet, mixing everything together.
- Place the skillet in the oven along with the spaghetti squash and cook for about 30 minutes until the chicken is cooked through and the squash is tender.
- Remove from the oven, scoop out the spaghetti squash, and serve the Mediterranean chicken and veggies over it.
