Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 1 piece yellow onion, diced
  • 1 can artichoke hearts, quartered or halved (14 oz)
  • 4 cloves garlic, minced
  • 1 cup kalamata olives
  • 1 cup grape or cherry tomatoes
  • 5 cups spinach
  • to taste salt and pepper
  • 1 small spaghetti squash (optional, omit for keto)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half, scoop out the seeds, and place it face-down on a sheet pan.
  3. In a cast iron skillet, heat over medium heat and add onions, artichoke hearts, and garlic, cooking for 4-5 minutes until softened.
  4. Move the vegetables aside and season the chicken with salt and pepper, browning it in the skillet for about 5 minutes on each side.
  5. Add tomatoes, olives, and spinach to the skillet, mixing everything together.
  6. Place the skillet in the oven along with the spaghetti squash and cook for about 30 minutes until the chicken is cooked through and the squash is tender.
  7. Remove from the oven, scoop out the spaghetti squash, and serve the Mediterranean chicken and veggies over it.
