Ingredients

The pork

  • 3-4 pounds pork roast cut into 2-3 inch chunks

The marinade

  • ¼ cup chicken broth
  • ¼ cup fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder or 2-3 cloves garlic, finely minced
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon black pepper

Optional toppings

  • to taste flatbread or pitas
  • to taste tzatziki sauce
  • to taste lettuce
  • to taste tomatoes
  • to taste rice
  • to taste fresh lemon wedges

Instructions

  1. For the Instant Pot, place the pork in the insert and whisk together the remaining ingredients in a bowl.
  2. Pour the mixture over the pork, coating the pieces.
  3. Secure the lid and cook on high pressure for 50 minutes, then let the pressure naturally release for 10 minutes before manually releasing the rest.
  4. Shred the pork and keep it warm in the Instant Pot until serving.
  5. For the Slow Cooker, place the pork in the insert and whisk the remaining ingredients, increasing the chicken broth to 1 cup.
  6. Pour the mixture over the pork, coat the pieces, cover, and cook on low for 8-9 hours or high for 4-5 hours.
  7. Shred the pork and keep warm in the slow cooker until serving.
  8. Serve with flatbread, tzatziki, lettuce, and tomatoes, or over rice or salad.
