Ingredients

The meat mixture

  • 12 oz boneless pork loin chops or boneless skinless chicken, sliced into ¼" slices
  • 1 Tablespoon olive oil
  • 2 teaspoons minced garlic
  • Tablespoons fresh lemon juice
  • 2 teaspoons minced fresh oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

The vegetable mixture

  • ¼ C diced tomato
  • ¼ C diced cucumber
  • 2 Tablespoons diced red onion

The sauce

  • 6 Tablespoons Greek Style Yogurt
  • ½ teaspoon lemon zest
  • ½ Tablespoon fresh minced parsley
  • ¼ teaspoon kosher salt

To assemble

  • 4 leaves Lettuce
  • 4 halves pita bread
  • 2-3 Tablespoons crumbled Athenos Feta cheese

Instructions

  1. Combine the meat ingredients in a shallow dish and set aside.
  2. Heat a medium skillet over medium-high heat.
  3. While the pan heats, mix the yogurt sauce ingredients and chill in the fridge.
  4. Add the meat mixture to the pan and cook for 3-4 minutes until cooked through.
  5. Combine the diced vegetables in a bowl.
  6. To assemble, place a lettuce leaf in each pita, add the pork mixture, top with the vegetable mixture, yogurt sauce, and sprinkle with feta cheese.
