Ingredients

Greek Salsa

  • ¼ cup diced cucumber
  • ¼ cup diced roasted red pepper
  • 2 tablespoons finely diced red onion
  • ¼ teaspoon dry oregano
  • ½ teaspoon lemon juice
  • ½ teaspoon garlic olive oil
  • 2 teaspoons chopped parsley
  • to taste salt and pepper

Other Ingredients

  • to taste pita chips
  • to taste hummus
  • to taste tzatziki
  • to taste feta cheese
  • to taste chopped parsley
  • optional prepared falafel
  • optional olives
  • optional pepperoncinis

Instructions

  1. Combine all ingredients for Greek Salsa in a bowl and stir to combine, then set aside.
  2. Thin out hummus with a bit of water and tzatziki with a bit of milk.
  3. Fill a large dinner plate with pita chips and drizzle hummus and tzatziki over them.
  4. Sprinkle chopped falafel on top of the pita chips, followed by the Greek salsa and feta cheese.
  5. Garnish with additional chopped parsley if desired.
