Greek Pork Souvlaki

The Main Ingredient

Instructions
- 1. Combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, thyme, lemon zest, salt, and pepper in a bowl and whisk until well mixed.
- 2. Place the pork in a bowl and pour the marinade over it, tossing to coat well.
- 3. Cover and refrigerate to marinate overnight (or at least 4 hours if overnight is not possible).
- 4. Soak the wooden skewers in cold water for about 30 minutes.
- 5. Preheat the grill to medium-high heat.
- 6. Thread the marinated pork onto the soaked skewers and discard the unused marinade.
- 7. Grill the kebabs, turning every 2-3 minutes, until cooked through (about 10-12 minutes).
- 8. Serve immediately, preferably with tzatziki sauce.
