Greek Pork Souvlaki

Ingredients

The Marinade

  • ¼ cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 3 cloves garlic, minced
  • 2 tbsp dried oregano
  • 1 tbsp fresh thyme
  • 1 tsp grated lemon zest
  • 1 tsp Himalayan salt
  • 1 tsp ground black pepper

The Main Ingredient

  • lbs pork tenderloin, cut into 1" cubes

Skewers

  • 6 pieces wooden skewers

Instructions

  1. 1. Combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, thyme, lemon zest, salt, and pepper in a bowl and whisk until well mixed.
  2. 2. Place the pork in a bowl and pour the marinade over it, tossing to coat well.
  3. 3. Cover and refrigerate to marinate overnight (or at least 4 hours if overnight is not possible).
  4. 4. Soak the wooden skewers in cold water for about 30 minutes.
  5. 5. Preheat the grill to medium-high heat.
  6. 6. Thread the marinated pork onto the soaked skewers and discard the unused marinade.
  7. 7. Grill the kebabs, turning every 2-3 minutes, until cooked through (about 10-12 minutes).
  8. 8. Serve immediately, preferably with tzatziki sauce.
