Chicken Souvlaki

Ingredients

  • 1 lb chicken breasts, cut into 1 inch cubes
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • ½ lemon juice
  • 2 tbsp mustard
  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil
  • to taste lemon slices for garnish
  • to taste fresh oregano for garnish

Instructions

  1. Prepare the marinade by whisking together salt, pepper, minced garlic, dried oregano, lemon juice, mustard, Greek yogurt, and olive oil.
  2. Add the chicken cubes to the marinade and let them sit at room temperature for 30 minutes or refrigerate for 60 minutes.
  3. Thread the marinated chicken onto skewers and preheat the grill to medium-high heat (about 400°F).
  4. Oil the grill and place the skewers on it, cooking for about 10-15 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F) and browned.
  5. Remove the skewers from the grill and let them rest for 5 minutes before serving.
