Instructions
- Prepare the marinade by whisking together salt, pepper, minced garlic, dried oregano, lemon juice, mustard, Greek yogurt, and olive oil.
- Add the chicken cubes to the marinade and let them sit at room temperature for 30 minutes or refrigerate for 60 minutes.
- Thread the marinated chicken onto skewers and preheat the grill to medium-high heat (about 400°F).
- Oil the grill and place the skewers on it, cooking for about 10-15 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F) and browned.
- Remove the skewers from the grill and let them rest for 5 minutes before serving.
