Instructions
- Combine marinade ingredients in a bowl, add chicken or portobellos, and let marinate at room temperature.
- Mix all cucumber yogurt sauce ingredients in a small bowl.
- Heat oil in a skillet, sauté shallot or onion for 2 minutes, add garlic, then cauliflower rice, and cook until tender.
- Preheat grill to medium-high, grill chicken, portobellos, and veggies for about 5 minutes, flipping as needed.
- Slice grilled chicken or portobellos and assemble bowls with cauliflower rice, veggies, and yogurt sauce.
