Ingredients

The chicken marinade

  • 1 pound chicken breast
  • 3 tablespoons olive oil
  • 1 lemon juice and zest
  • 2 cloves garlic
  • 1 teaspoon oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

To assemble the bowls

  • 2 cups cooked couscous
  • 1 cup cherry tomatoes
  • 1 Persian cucumber sliced
  • ¼ cup Greek feta
  • ¼ cup Kalamata olives
  • ¼ cup garlic yogurt sauce
  • to taste fresh dill
  • to serve pita bread

Instructions

  1. Marinate the chicken in a mixture of olive oil, lemon juice and zest, garlic, oregano, salt, and pepper for 10 minutes in the fridge.
  2. Preheat the grill or skillet to medium-high heat and brush with oil.
  3. Grill the chicken for 3-4 minutes per side or until fully cooked, then let it rest for 5 minutes before slicing.
  4. Assemble the bowls by adding couscous, followed by tomatoes, cucumber, sliced chicken, feta, olives, and drizzle with garlic yogurt sauce. Sprinkle with fresh dill and serve with pita.
