Ingredients

Salad Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • ½ teaspoon dried basil
  • ½ teaspoon oregano
  • ½ teaspoon fresh rosemary, minced
  • 1 lb raw boneless skinless chicken breasts, sliced into thin strips
  • 18 oz lettuce (preferably a spinach blend or Spring mix)
  • 1 medium cucumber, sliced
  • 18 count grape tomatoes, chopped
  • 1 1/8 cup crumbled Feta cheese

Greek Dressing

  • ¼ cup extra virgin olive oil
  • ¾ teaspoon garlic powder
  • ¾ teaspoon oregano
  • ¾ teaspoon dried basil
  • ½ teaspoon onion powder
  • ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons water
  • cup red wine vinegar

Instructions

  1. Combine all dressing ingredients in a bowl and whisk until mixed. Store in a container and shake before use.
  2. Heat oil in a skillet over medium-high heat. Add garlic, basil, oregano, and rosemary, cooking until fragrant.
  3. Add chicken to the skillet, stirring to coat with the oil and herbs. Cook for 5-7 minutes until fully cooked.
  4. On each plate, spread 3 oz of lettuce and top with 2 tablespoons of dressing. Add cucumber slices and tomatoes.
  5. Sprinkle each salad with 3 tablespoons of Feta cheese and 2 oz of chicken.
