Chicken Souvlaki

The marinade

Instructions
- 1. Combine olive oil, lemon juice, white wine vinegar, minced garlic, dried oregano, salt, and pepper in a bowl and whisk together.
- 2. Place chicken chunks in a bowl and pour the marinade over them, mixing well to coat. Cover and refrigerate for a few hours or overnight.
- 3. Soak skewers in cold water for at least 30 minutes before assembling the kebabs.
- 4. Preheat the grill to medium-high heat.
- 5. Remove chicken from the marinade and thread onto skewers, discarding any leftover marinade.
- 6. Grill the kebabs, turning occasionally, until the chicken is cooked through and has grill marks, about 10-12 minutes.
- 7. Serve with tzatziki sauce and your choice of side.
