Chicken Souvlaki

Ingredients

The chicken

  • 2 lb skinless chicken breasts, cut into bite size chunks

The marinade

  • ΒΌ cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp white wine vinegar
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp Himalayan salt
  • 1 tsp freshly ground black pepper

Instructions

  1. 1. Combine olive oil, lemon juice, white wine vinegar, minced garlic, dried oregano, salt, and pepper in a bowl and whisk together.
  2. 2. Place chicken chunks in a bowl and pour the marinade over them, mixing well to coat. Cover and refrigerate for a few hours or overnight.
  3. 3. Soak skewers in cold water for at least 30 minutes before assembling the kebabs.
  4. 4. Preheat the grill to medium-high heat.
  5. 5. Remove chicken from the marinade and thread onto skewers, discarding any leftover marinade.
  6. 6. Grill the kebabs, turning occasionally, until the chicken is cooked through and has grill marks, about 10-12 minutes.
  7. 7. Serve with tzatziki sauce and your choice of side.
