Super-Easy Greek Chicken Souvlaki

Ingredients

The marinade

  • 3 lbs. boneless, skinless chicken thighs
  • to taste kosher salt
  • to taste black pepper
  • 1-2 teaspoons oregano
  • 1 cup basil (packed), roughly chopped
  • 3-6 cloves garlic, minced
  • to taste extra-virgin olive oil

For serving

  • as needed lemon wedges
  • as needed naan or pita bread
  • as needed tzatziki
  • 2 cups diced tomatoes or cucumbers
  • to taste feta cheese, crumbled or sliced
  • to taste basil or mint
  • to taste extra-virgin olive oil
  • to taste white balsamic vinegar

Instructions

  1. Marinate the chicken by puréeing garlic and basil into a paste, then mixing with olive oil, salt, pepper, and oregano in a bowl with chicken pieces. Marinate for at least two hours.
  2. Preheat the grill or broiler. Skewer the marinated chicken and season lightly with salt and pepper.
  3. Grill the skewers for about 3 minutes per side or broil for 5 minutes on one side and then 4-5 minutes on the other until charred.
  4. Serve the chicken with tzatziki, lemon wedges, and warm naan or pita.
  5. Prepare the salad by mixing diced tomatoes or cucumbers with olive oil, vinegar, salt, pepper, and herbs, then top with feta.
