Ingredients

Lamb Skewers

  • pounds lamb cut into 1 inch pieces
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 4 cloves garlic, minced or grated
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper

Oregano Potatoes

  • pounds potatoes
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1-2 tablespoons fresh oregano, chopped

Avocado Tzatziki

  • 1 cup plain full-fat Greek yogurt
  • 1 clove garlic, minced or grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil
  • ½ lemon juice of
  • to taste salt
  • to taste pepper
  • 1 ripe avocado, diced
  • a pinch crushed red pepper flakes

For the Plates

  • hummus
  • pita
  • feta cheese
  • fresh mint
  • fresh dill
  • cucumbers
  • pickled red onions
  • tomatoes

Instructions

  1. Combine the lamb ingredients in a zip-top bag, seal, and chill for at least 1 hour.
  2. Preheat the oven to 425°F and prepare the potatoes on a baking sheet with olive oil, salt, and pepper. Roast for 15-20 minutes, flip, and roast for another 15-20 minutes, adding oregano in the last 5 minutes.
  3. Preheat the grill and thread the marinated lamb onto skewers. Grill until lightly charred and cooked to your liking, about 8-10 minutes.
  4. Assemble the plates with lamb skewers, roasted potatoes, cucumbers, pickled red onions, feta, hummus, and avocado tzatziki.
