For the Plates

Instructions
- Combine the lamb ingredients in a zip-top bag, seal, and chill for at least 1 hour.
- Preheat the oven to 425°F and prepare the potatoes on a baking sheet with olive oil, salt, and pepper. Roast for 15-20 minutes, flip, and roast for another 15-20 minutes, adding oregano in the last 5 minutes.
- Preheat the grill and thread the marinated lamb onto skewers. Grill until lightly charred and cooked to your liking, about 8-10 minutes.
- Assemble the plates with lamb skewers, roasted potatoes, cucumbers, pickled red onions, feta, hummus, and avocado tzatziki.
