Ingredients

Basic Bread Dough

  • cups plain flour plus more for kneading
  • cups whole wheat flour
  • teaspoons dried yeast
  • 4 tablespoons sugar
  • teaspoons salt
  • 1 large egg

Pecan Buns

  • ½ cup pure maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon unsalted butter
  • ¼ teaspoon salt
  • 2 tablespoons milk
  • cup raw pecans chopped
  • 12 pieces pecan halves, to serve
  • 1 recipe Basic Bread Dough
  • to taste flaky salt for sprinkling
  • to serve salted treacle butter

Instructions

  1. Mix the flour, yeast, sugar, and salt in a large bowl, then create a well in the center.
  2. Add the egg and lukewarm water, mix by hand, and knead the dough for about 10 minutes until smooth.
  3. Place the dough in an oiled bowl, cover, and let it rise in a warm place for 1 hour until doubled.
  4. Butter a 12-cup muffin tin and heat the maple syrup, sugar, butter, salt, and milk in a saucepan until melted.
  5. Divide the pecans and maple mixture among the muffin cups.
  6. Punch down the dough, divide it into 12 balls, and place each in a muffin cup.
  7. Cover with oiled plastic wrap and let rise for 30-45 minutes until doubled.
  8. Preheat the oven to 350°F and bake the buns for 20-25 minutes until golden brown.
  9. Flip the muffin tin onto a cooling rack and let it sit for 5 minutes before serving.
