Ingredients

  • 1 pound frozen cauliflower
  • 1 large bell pepper
  • 1 large onion
  • ¼ pound Italian sausage
  • 6 large eggs
  • 4 large egg whites
  • 1 cup cottage cheese
  • cups shredded cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven to 180C/350F and grease a 9 x 13-inch baking dish.
  2. Steam or microwave the cauliflower until tender and remove excess moisture.
  3. In a non-stick pan, heat oil and add the onions, peppers, and ground sausage, cooking until browned.
  4. Combine the cauliflower, vegetables, and sausage in the baking dish.
  5. In a bowl, whisk together the eggs, egg whites, cottage cheese, shredded cheese, salt, and pepper, then pour over the mixture in the baking dish.
  6. Bake for 35-40 minutes until the center is cooked.
