Instructions
- Preheat the oven to 180C/350F and grease a 9 x 13-inch baking dish.
- Steam or microwave the cauliflower until tender and remove excess moisture.
- In a non-stick pan, heat oil and add the onions, peppers, and ground sausage, cooking until browned.
- Combine the cauliflower, vegetables, and sausage in the baking dish.
- In a bowl, whisk together the eggs, egg whites, cottage cheese, shredded cheese, salt, and pepper, then pour over the mixture in the baking dish.
- Bake for 35-40 minutes until the center is cooked.
