Instructions
- Preheat the oven to 375°F.
- Cook the sausage in a skillet over medium heat until browned, about 7-8 minutes.
- While the sausage cooks, chop the onion, garlic, bell pepper, mushrooms, spinach, and sage.
- Grease a large baking dish with ghee.
- In a mixing bowl, whisk the eggs and then add the cooked sausage, chopped veggies, cheese (if using), salt, and pepper.
- Pour the mixture into the baking dish.
- Bake for 30 minutes or until the eggs are set in the middle.
- Allow to cool for 5-10 minutes, cut into pieces, and serve.
