Ingredients

The Casserole

  • 1 lb ground sausage
  • 1 unit onion, diced
  • 3 cloves garlic, minced
  • 1 unit bell pepper, diced
  • 1 cup mushrooms, diced
  • 3 cups spinach, roughly chopped
  • 2 tbsp fresh sage, chopped
  • 2 cups shredded cheese
  • 2 tbsp ghee
  • 12 units eggs
  • ½ tsp sea salt
  • ½ tsp ground pepper

Optional Topping

  • 1 unit sliced avocado

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the sausage in a skillet over medium heat until browned, about 7-8 minutes.
  3. While the sausage cooks, chop the onion, garlic, bell pepper, mushrooms, spinach, and sage.
  4. Grease a large baking dish with ghee.
  5. In a mixing bowl, whisk the eggs and then add the cooked sausage, chopped veggies, cheese (if using), salt, and pepper.
  6. Pour the mixture into the baking dish.
  7. Bake for 30 minutes or until the eggs are set in the middle.
  8. Allow to cool for 5-10 minutes, cut into pieces, and serve.
