Ingredients

The base

  • ¼ cup ghee
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium apples, cored and diced
  • 2 teaspoons cinnamon
  • cup raisins
  • cup walnuts
  • salt to taste

The egg mixture

  • 6-8 large eggs
  • 1 cup full-fat coconut milk

Instructions

  1. Preheat the oven to 325ºF.
  2. Heat ghee in a large cast-iron skillet over medium heat and add the sweet potatoes.
  3. Cook the sweet potatoes, stirring often, for about 5-10 minutes until they begin to soften.
  4. Add the diced apples, cinnamon, and raisins, cooking until the apples are softened and the raisins are plumped, about 8-10 minutes.
  5. If necessary, add a little water to prevent sticking.
  6. Stir in the walnuts and salt to taste, sautéing for an additional minute or two.
  7. In a medium bowl, whisk together the eggs and coconut milk until smooth.
  8. Remove the sweet potato-apple mixture from heat and pour the egg mixture over it, smoothing it out with a spoon.
  9. Bake for 20 minutes or until set, checking that a knife inserted in the middle comes out clean.
