Instructions
- Preheat the oven to 400°F.
- Scrub the sweet potatoes and slice them thinly using a mandolin.
- Spray an 8x8 baking dish with avocado or coconut oil.
- Arrange the sweet potato slices in the dish, packing them tightly together.
- Dice the onions and place them between the sweet potato slices.
- Pour the dressing evenly over the sweet potatoes.
- Bake for 40 minutes.
- Remove from the oven and sprinkle with chopped rosemary, pecans, salt, and pepper.
