Ingredients

The Crostini

  • 5 oz French bread baguette
  • 1 clove garlic
  • 3 oz goat cheese

The Tapenade

  • 18 medium-sized black olives
  • 16 medium-sized green Manzanilla olives
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon mustard

Instructions

  1. Preheat the oven to 400°F.
  2. Arrange the baguette slices on a foil-lined baking sheet and spray both sides with cooking spray.
  3. Bake the baguette slices for 10-12 minutes until the edges are golden and allow to cool.
  4. In a food processor, combine black olives, green olives, garlic, olive oil, lemon juice, and mustard; pulse until finely chopped.
  5. Spread goat cheese evenly on each toasted baguette slice.
  6. Top each piece with a tablespoon of the olive tapenade and serve.
