Ingredients

The crostini base

  • 1 mini loaf sourdough bread
  • 2 cloves garlic

The topping

  • 4 oz goat cheese
  • 12 oz jar of roasted peppers
  • 1 tsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp fresh chopped parsley
  • 2 tbsp walnuts
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 450°F.
  2. Slice the sourdough bread into thin slices and place them on a baking sheet.
  3. Toast the bread in the oven for about 5 minutes until slightly browned.
  4. Rub each slice of hot bread with one garlic clove.
  5. Drain and slice the roasted peppers into thin strips.
  6. In a bowl, combine the peppers, olive oil, balsamic vinegar, parsley, and walnuts. Mix well and season with salt and pepper.
  7. Spread a layer of goat cheese on each crostini and top with the roasted pepper mixture.
