Ingredients

The filling

  • 3 large egg yolks
  • cup key lime juice
  • 1 can (14 ounces) full-fat sweetened condensed milk
  • 1 teaspoon lime zest
  • hot water for water bath

The crust

  • 2 full sheets graham crackers
  • 1 tablespoon unsalted butter
  • 1 teaspoon packed light or dark brown sugar

Optional toppings

  • to taste whipped cream or meringue
  • to taste lime slices
  • to taste chopped macadamia nuts or pecans
  • to taste raspberries
  • to taste edible florals

Instructions

  1. Preheat the oven to 350°F (177°C) and grease the ramekins.
  2. In a bowl, beat the egg yolks until pale, then add lime juice, sweetened condensed milk, and lime zest.
  3. Pour the filling into the prepared ramekins.
  4. Add hot water to the baking pan for the water bath.
  5. Bake for 17-20 minutes until the filling is set but slightly jiggly in the center.
  6. Cool the pies at room temperature for about 1 hour, then chill in the refrigerator for 1 hour.
  7. While cooling, crush the graham crackers and toast with butter and brown sugar in a skillet.
  8. After chilling, sprinkle the crust topping on each pie and add any desired toppings before serving.
