Instructions
- Preheat the oven to 350°F (177°C) and grease the ramekins.
- In a bowl, beat the egg yolks until pale, then add lime juice, sweetened condensed milk, and lime zest.
- Pour the filling into the prepared ramekins.
- Add hot water to the baking pan for the water bath.
- Bake for 17-20 minutes until the filling is set but slightly jiggly in the center.
- Cool the pies at room temperature for about 1 hour, then chill in the refrigerator for 1 hour.
- While cooling, crush the graham crackers and toast with butter and brown sugar in a skillet.
- After chilling, sprinkle the crust topping on each pie and add any desired toppings before serving.
