Instructions
- If using flax eggs, combine ground flax seeds with warm water.
- In a large bowl, mix the potatoes, carrot, quinoa, onion, and nutritional yeast.
- Add the (flax) eggs, flour, breadcrumbs, cayenne pepper, black pepper, and sea salt to the mixture and stir until well combined.
- Form the mixture into small patties.
- Heat the coconut oil over medium heat.
- Add the patties to the pan and cook for about 5 minutes on each side, or until golden brown.
