Chicken Almond Ding

The Garnish

Instructions
- Whisk together the chicken broth, cornstarch, soy sauce, rice vinegar, sugar, and hoisin sauce in a small bowl and set aside.
- Heat the vegetable oil in a large pan over medium-high heat.
- Season the chicken with salt and pepper, add it to the pan, and cook until browned and cooked through, about 3-5 minutes per side.
- Add the minced garlic to the pan and cook for 30 seconds.
- Add the mixed vegetables and 2 teaspoons of water to the pan, cooking until the vegetables are crisp-tender, about 4-5 minutes.
- Season the vegetables with salt and pepper to taste.
- Add the chicken broth mixture to the pan, increase the heat to high, and bring to a boil, cooking for 1 minute or until the sauce thickens.
- Stir in the toasted almonds and serve immediately, over rice if desired.
