Ingredients

The yogurt mixture

  • 1 cup plain greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced or grated
  • to taste salt
  • to taste pepper

The main ingredients

  • 4 eggs
  • 4 pieces naan
  • zest from 1 lemon
  • ¼ cup sun-dried tomato pesto
  • 1-2 cups fresh baby spinach
  • 4 ounces goat cheese, crumbled
  • toasted sesame seeds

The spicy butter sauce

  • 2 tablespoons butter
  • 2 tablespoons coconut oil
  • 1-2 teaspoons crushed red pepper flakes
  • ½ teaspoon sweet paprika

Instructions

  1. Mix the yogurt, dill, parsley, garlic, salt, and pepper in a bowl and refrigerate until needed.
  2. Heat a skillet with olive oil or butter and fry the eggs to your preference.
  3. Spread the yogurt mixture over warm naan, swirl in sun-dried tomato pesto, and add fried eggs.
  4. Top with lemon zest, fresh spinach, and drizzle with spicy butter sauce.
  5. Garnish with fresh herbs, sesame seeds, and crumbled goat cheese.
