Instant Pot Rice with Harissa and Dates

Ingredients

The rice

  • 1 cup basmati rice

The aromatics

  • 1 onion finely chopped
  • 3 cloves garlic, minced
  • 1 bay leaf

The flavorings

  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • 2 tablespoons harissa
  • 6 pieces medjool dates, pitted and diced
  • 1 orange zested and juiced

Instructions

  1. Heat olive oil in a skillet over high heat until shimmering, then reduce to medium and sauté the onions with a pinch of salt until soft.
  2. Add garlic and bay leaf, cooking for an additional minute, then stir in the harissa.
  3. Add the rinsed rice and stir until each grain is glistening, then mix in the dates and orange zest.
  4. Juice the orange and measure to create 1 and 1/3 cups of liquid, adding it to the pan along with salt.
  5. Bring to a simmer, cover, and cook on low heat for 20 minutes, then let it stand for 10 minutes before fluffing with a fork.
